The aroma of the browning ripening bananas on your counter fills the house. Why do bananas exist, if not for banana bread? Peel and mash those bananas to prepare to bake this deliciously moist loaf, in an easy and forgiving recipe; taking less time than your evening shower.
Yields one loaf, 12 slices
Ingredients:
- 3/4 cup whole wheat flour
- 1 cup all-purpose flour
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 2 eggs - can be swapped for applesauce!
- 1/2 cup oil
- 3 tablespoons brown sugar
- 2 tablespoons sugar
- 1/4 cup + 1 tablespoon skim milk
- 1 teaspoon vanilla
- 1 cup mashed banana
- 1/2 - 1/3 cup chocolate chips
Directions:
Preheat oven to 325F and grease a loaf pan.
Mix together the flours, cinnamon, salt, and baking soda.
In a separate larger bowl, mix together the eggs, oil, sugars, milk and vanilla.
Pour the dry ingredients, the mashed bananas, and chocolate chips into the wet ingredients and mix them together.
Pour into the pan, sprinkle with cinnamon and bake for 50 minutes, until inserted toothpick comes out clean.
